Easy Pho (beef soup with salad)

Vietnamese soup.


  • 1 onion, cut into rings
  • 45ml lemon juice
  • 250g bahn pho noodles
  • 1 bunch fresh coriander
  • 6 sprigs fresh mint
  • 6 crisp lettuce leaves, shredded
  • 150g sirloin of beef, shredded paper-thin
  • 4 bird's eye chillies, finely sliced
  • 1 clove garlic, coarsely chopped
  • 1 spring onion, finely sliced
  • fish sauce to taste
  • 2 lemons, cut into wedges
  • 1 Litres boiling beef stock
  • bean sprouts to garnish (optional)


  • Soak the onion in the lemon juice for 1 hour. Soak and cook the noodles and keep warm.
  • Place the warm noodles, onion rings, herbs, lettuce, shredded beef, chilli, garlic, spring onion, fish sauce and lemon wedges on the table in bowls.
  • Place the boiling stock on the table with a ladle for serving.
  • Place a layer of noodles, onion rings, herbs, shredded lettuce, shredded beef, chilli, garlic and spring onion in a warmed individual soup bowl. Pour boiling stock over the ingredients, releasing the fragrances and cooking the beef.
  • Season with fish sauce and lemon juice to taste.
